16. Thuringia Chicken Cutlet

Ingredients

4 boneless chicken breasts

2 eggs

1/3 cup flour

2 tablespoons Greek yogurt

1/2 teaspoon salt

1 cup plain breadcrumbs

1/4 teaspoon black pepper

4 tablespoons butter

2 tablespoons vegetable oil

1 tablespoon lime juice

1 teaspoon chopped fresh chives

1/4 cup chicken broth

Directions

Flatten the chicken breasts with a mallet

Pour flour in one dish, whisked egg and yogurt in another dish and breadcrumbs in a third dish

Sprinkle pepper and salt on the chicken

Place a tablespoon of butter over hot oil on a skillet

Coat the chicken breast with breadcrumbs, egg mixture, and flour

Place on wax paper and sauté until it is golden

Add chives, broth, lime juice, and butter. Leave until thick.
